Candied Mushrooms


  • 2 c Brown Bunapi® mushrooms
  • 3 c Water
  • 3 c Honey
  • 1 T Salt
  • 2 T Vanilla bean paste


Cut bottom of mushroom cluster and pull apart into smaller clusters or individual mushrooms.

Combine honey, water, salt and vanilla in a pot, stir and add mushrooms. Bring to boil and cook 1 hour, or until mushrooms are translucent and have a slightly firm, gummy-candy texture.

Strain and spread on a greased parchment-lined sheet tray.

Place in a preheated 135°F oven for 1 hour. Mushrooms should no longer be sticky and have a slightly firm texture. Store at room temperature in an airtight container.
