Chef Paris Dreibelbis launched his culinary journey 15 years ago in Dubuque, IA, before relocating to Minneapolis to hone his skills under the mentorship of James Beard Award-winning chefs Gavin Kaysen at Spoon & Stable and Paul Berglund at Bachelor Farmer. In 2017, his talents were nationally recognized when he clinched 1st place at the esteemed young-chef competition, Ment'or BKB. The win presented him with the remarkable opportunity to work alongside Team USA and three-Michelin-starred chef Matthew Kirkley in Napa, California. Together, they prepared for the globally acclaimed Bocuse d’Or competition in Lyon, France. When the COVID-19 pandemic struck, Paris pivoted by launching his own pizza business. He began humbly, with a small table, tent, and oven at a local farmers' market. Demonstrating resilience and business savvy, he expanded to a food truck and ultimately sold it to finance his current brick-and-mortar establishment.
