He has 15 years of restaurant experience, ranging from fine dining to fast casual in addition to extensive knowledge in whole-animal butchery and charcuterie. Eric holds a Bachelors degree in Culinary Arts and Foodservice Management from Johnson & Wales University in Providence, RI. He currently resides in O'Fallon, MO with his wife, infant baby girl and dog.
