Baja Crab Elotes Tacos

Ingredients

  • 2 ea. Corn Tortilla, 4.5"
  • 1 c Lump Blue Crab
  • 2 c Monarch® Fire Roasted Corn and Poblano Peppers Blend with Onions
  • 1/2 tsp. Kosher Salt
  • 2 T Monarch Mayonnaise
  • 1 tsp. Monarch Chili Powder
  • 2 T del Pasado® Queso Fresco
  • 2 ea. Lime Wedge

PREPARATION

  1. Combine crab, roasted corn & poblano mixture with mayo, chili powder and salt. Stir gently to combine. 
  2. Place corn and crab salad into warmed corn tortillas. 
  3. Garnish with queso fresco and lime wedges.
