Paloma Cocktail


  • 1.5 oz. Tequila Blanco
  • 5 oz. Grapefruit Liquor
  • 1 oz. Housemade Grapefruit Cordial, recipe follows
  • Sparkling Soda, as needed


To make grapefruit cordial: Peel entire grapefruit for bar garnishes, and juice using a centrifuge to clarify fresh (the juice will turn completely clear).

Add the grapefruit peels, sugar to taste, a dash of pea blossom powder and sous vide for 2 hours; strain, bottle and refrigerate (pea blossoms add back the pink color we clarified out).

Combine tequila, liquor and cordial, and pour into a tall glass. Top with soda. Makes 1 drink.
