Organic Spring Mix Charred Peach Salad


  • 3 pounds Cross Valley Farms® Organic Spring Mix
  • 12 each charred peaches
  • 2 cups roasted corn
  • 2 each red onions
  • 2 pounds riced cauliflower
  • 1 quart peach vinaigrette


Prepare peach vinaigrette: 25% peach infused olive oil, 75% walnut oil, 1:1 with apple cider vinegar. Zest and juice of one blood orange. Emulsify in blender with 1/2 cup honey and 1 tablespoon mustard. Set aside. 

Cut peaches in half, remove pit, char fruit 2-3 minutes. Slice into 1/8 segments per half. Prep sliced red onions, thaw charred corn.

Assemble salad with remaining ingredients, toss with vinaigrette. Yield: 24 each, 8 ounces per person.
