Green Chickpea Hummus
Ingredients
- 5 lb. Monarch® Green Chickpeas, steamed and cooled
- 3 oz. Rykoff Sexton® Tahini Paste
- 6 oz. Cross Valley Farms® Lemon, jucied
- 3 oz. Monarch Kosher Salt
- 1.5 oz. Monarch Black Pepper
- 5 oz. Cross Valley Farms Whole Cloved Garlic
- 5 oz. Rykoff Sexton Extra Virgin Oilve Oil
PREPARATION
- Using a large food processor, add the cooked and cooled green chickpeas and blend.
- Once blended, add salt, pepper, lemon juice, tahini and garlic.
- Continue to blend, while food processor is on, slowly stream in the olive oil.
- Periodically scrape down the sides, and continue to blend until mixture is creamy and smooth.
- Once consistency is achieved, remove hummus from the food processor and chill before serving.
