Green Chickpea Hummus

Ingredients

  • 5 lb. Monarch® Green Chickpeas, steamed and cooled
  • 3 oz. Rykoff Sexton® Tahini Paste
  • 6 oz. Cross Valley Farms® Lemon, jucied
  • 3 oz. Monarch Kosher Salt
  • 1.5 oz. Monarch Black Pepper
  • 5 oz. Cross Valley Farms Whole Cloved Garlic
  • 5 oz. Rykoff Sexton Extra Virgin Oilve Oil

PREPARATION

  1. Using a large food processor, add the cooked and cooled green chickpeas and blend.
  2. Once blended, add salt, pepper, lemon juice, tahini and garlic.
  3. Continue to blend, while food processor is on, slowly stream in the olive oil. 
  4. Periodically scrape down the sides, and continue to blend until mixture is creamy and smooth.
  5. Once consistency is achieved, remove hummus from the food processor and chill before serving.
