Totchos (Cheddar Sour Cream and Chive Potato Tots)

Ingredients

  • 5 oz. Monarch® Cheddar Sour Cream and Chive Potato Tots
  • 2 oz. Stock Yards® Beef Tenderloin Tips
  • 1 oz. Patuxent Farms® Applewood Smoked Bacon Cooked, roughly chopped
  • 3 tsp. Glenview Farms® Sour Cream
  • ½ tsp. Cross Valley Farms® Chives, chopped
  • ½ tsp. Cross Valley Farms Green Onion, slivered
  • ¼ tsp. Ancho Chili Flakes
  • Salt and Pepper, to taste

PREPARATION

  1. Beef tenderloin tips can be sautéed or deep fried to your liking.
  2. Deep fry potato tots until golden brown.
  3. Arrange potato tots, beef and bacon on ¼-sheet pan or suitable vessel.
  4. Place under a salamander or into a convection oven to desired color.
  5. Garnish on a platter with a few dollops of sour cream, chives, green onion and a sprinkle of ancho chili Flakes.
