Sweet Onion Vinaigrette
Ingredients
- 5 C Monarch® Pickled Red Onions, reserved pickling juice
- ½ C Rykoff Sexton® Dark Ale Mustard
- 8 oz. Cross Valley Farms® Vidalia Onion, roughly chopped
- 1 C Monarch Amber Grade A Honey
- 2 T Monarch Kosher Salt
- 2 tsp. Monarch Ground Black Pepper
- ¼ C Cross Valley Farms Washed Fresh Parsley, roughly chopped
- 10 C Roseli® Soybean Olive Pomace 90/10
PREPARATION
- In a blender, purée reserved pickling juice, mustard, onion, salt, pepper and honey.
- Once puréed, keep blender running and slowly pour in oil.
- Once oil has completely mixed in, keep blender running and add chopped parsley.
- Remove salad dressing from blender and store in appropriate container.
