Sweet Onion Vinaigrette

Ingredients

  • 5 C Monarch® Pickled Red Onions, reserved pickling juice
  • ½ C Rykoff Sexton® Dark Ale Mustard
  • 8 oz. Cross Valley Farms® Vidalia Onion, roughly chopped
  • 1 C Monarch Amber Grade A Honey
  • 2 T Monarch Kosher Salt
  • 2 tsp. Monarch Ground Black Pepper
  • ¼ C Cross Valley Farms Washed Fresh Parsley, roughly chopped
  • 10 C Roseli® Soybean Olive Pomace 90/10

PREPARATION

  1. In a blender, purée reserved pickling juice, mustard, onion, salt, pepper and honey.
  2. Once puréed, keep blender running and slowly pour in oil.
  3. Once oil has completely mixed in, keep blender running and add chopped parsley.
  4. Remove salad dressing from blender and store in appropriate container.
