Smoked Blue Cheese Fries


  • 9 pounds Monarch® House Cut French Fries
  • 2 pounds Glenview Farms® Premium Applewood Smoked Blue Cheese Crumbles
  • 1 quart heavy cream
  • 1 bunch scallions
  • 1 teaspoon Monarch® Ground Nutmeg


Prepare fondue by heating heavy cream and 75% of the blue cheese crumbles and nutmeg. Simmer until thick and lump-free. 

Deep-Fry house cut French fries. Slice scallions. 

Assemble per order: 

  • 6 ounces French fries
  • 1/2 cup blue cheese fondue topping 

Garnish with 1 teaspoon scallions and 1 tablespoon smoked blue cheese crumbles.
Yield 24 each, 8 ounces per person.
