Shredded Pot Roast and Savory Sweet Potato Hash
Ingredients
- 2 lb. Pot Roast
- 4 c Chef’s Line® Sweet and Savory Sweet Potato Blend
- 2 c Monarch® Low Sodium Brown Gravy Mix
- 1 c Monarch Garlic Aioli
- 1 c Chef’s Line® Crème Fraîche
- 3 T Monarch Prepared Horseradish
- 4 T Glenview Farms® Smoked Feta Cheese
- 2 T Cross Valley Farms® Italian Parsley
- 8 ea. Glenview Farms Cage Free Eggs
PREPARATION
- Heat pot roast according to package directions. Let cool to touch and shred. Hold warm.
- Make brown gravy mix according to package directions. Hold warm.
- Combine garlic aioli, crème fraîche, and prepared horseradish in a bowl. Season with salt and pepper. Adjust horseradish for spiciness as desired. Transfer into a squeeze bottle and refrigerate until needed.
- Roast sweet potato blend according to package directions. Hold warm.
To Plate: Place sweet potato blend into a shallow bowl. Top with shredded pot roast, drizzle with horseradish cream sauce, and sprinkle minced Italian parsley. Finish with two eggs cooked to order.
