Prime Rib with Mashed Potatoes, Roasted Carrots, Gravy and Rolls
Ingredients
- 1 ea. Cattleman’s Selection® Prime Rib
- 1 to 2 ea. Cross Valley Farms® Homestyle Mashed Potatoes
- 1 ea. Monarch® Au Jus Mix
- 1 ea. Chef’s Line® Demi-Glace
- 1 bag Monarch Assorted Color Carrot Coins
- 0.25 c Cross Valley Farms Italian Parsley, minced
- 1 batch Monarch Parker House Rolls
- 1 c Chef’s Line Crème Fraîche
- 1 c Monarch Garlic Aioli
- 3 T Monarch Horseradish
PREPARATION
- Prepare prime rib according to package directions.
- Prepare au jus according to package directions, substitute half of required liquid with Chef's Line Demi-Glace to enhance flavor.
- Roast carrots according to package instructions. Mount with butter. Garnish with minced parsley.
- Combine crème fraîche, garlic aioli and horseradish to make horseradish cream sauce. Season with salt and pepper, to taste.
