Prime Rib Chili
Ingredients
- 6 to 8 oz. Cattleman’s Selection® Prime Rib
- 1 ea. Cross Valley Farms® Yellow Onion, small dice
- 0.5 tsp. Cross Valley Farms Garlic Cloves, minced
- 2 ea. Jalapeño, seeded and diced
- 1.5 to 2 c Monarch® Au Jus Mix, reconstituted
- 2 c del Pasado® Fire Roasted Diced Tomatoes
- 0.75 c Roseli® Tomato Paste
- 2 c Monarch Tomato Sauce
- 4 c Monarch Red Kidney Beans, drained and rinsed
- 2 c del Pasado Black Beans, drained and rinsed
- 2 T Monarch Ancho Chili Seasoning
PREPARATION
- Cook prime rib according to package instructions. Cool and cut into bite-sized pieces.
- In a large stockpot, heat the oil and pot to medium-high heat. Add the diced onion, minced garlic and diced jalapeño to the heated oil and sauté for 2-3 minutes. Cook until the onions are translucent.
- Add the diced tomatoes, tomato paste, tomato sauce and au jus to the stockpot. Add chili beans and Ancho Seasoning Blend. Bring to a boil, reduce to a simmer.
- Add the chili seasoning mix and stir to combine all of the ingredients. Simmer for 20-30 minutes. Taste and adjust seasonings. Add in prime rib and cook until heated through.
