Organic Baby Spinach and Wild Arugula Salad with Grapefruit and Pomegranate
- 4 ½ pounds Cross Valley Farms® Organic Baby Spinach and Wild Arugula Blend
- 3 cups Pomegranate Seeds
- 6 cups Pink Grapefruit Sections in Syrup, drained
- 8 Shallots, finely diced
- 1.5 quarts Monarch® Exquisite Paris Vinaigrette
For each serving, portion approximately 1 cup (2.5 ounces) salad blend into serving bowl.
Toss with 1/8 cup pomegranate, 3-4 grapefruit segments, ½ teaspoon shallots.
Serve with 1 ounce salad dressing.
