Grilled Peach Crostini


  • 2 pounds Monarch® Grilled Peaches, Defrosted
  • 13 Chef’s Line® Ficelle Rolls
  • 1 cup Olive Oil
  • 25 oz. Glenview Farms® Fresh Goat Cheese
  • 2 cups Honey
  • 4 oz. Fresh Mint


Slice ficelle on a bias into crostini, brush with oil and toast in 400°F oven until golden brown and crispy. Let cool. 

Stir cheese briskly with a spoon, or whisk to lighten and aerate. Spread 1-2 tablespoons onto crostini, top with peach slices, a drizzle of honey and a sprig of thyme. Yield: 25 Servings.
