Creamy Tomato Soup with Gourmet Three Cheese Croutons

Ingredients

  • 4 c Roseli® Diced Tomatoes
  • 1 c Glenview Farms® Heavy Cream
  • .25 c Fresh Basil, torn
  • 2 Slices Chef's Line® Sprouted Grain Bread
  • 3 oz. Glenview Farms Shredded Fontina, Gruyere and Gouda Cheese Blend

PREPARATION

  1. Heat diced tomatoes and heavy cream in a large pot. Season with salt and pepper. Add basil. 
  2. Purée in blender, pass through a fine mesh strainer for a smooth soup. 
  3. Make grilled cheese sandwiches and cut into cubes. 
  4. Garnish soup with grilled cheese croutons and basil chiffonade.
