Creamy Tomato Soup with Gourmet Three Cheese Croutons
Ingredients
- 4 c Roseli® Diced Tomatoes
- 1 c Glenview Farms® Heavy Cream
- .25 c Fresh Basil, torn
- 2 Slices Chef's Line® Sprouted Grain Bread
- 3 oz. Glenview Farms Shredded Fontina, Gruyere and Gouda Cheese Blend
PREPARATION
- Heat diced tomatoes and heavy cream in a large pot. Season with salt and pepper. Add basil.
- Purée in blender, pass through a fine mesh strainer for a smooth soup.
- Make grilled cheese sandwiches and cut into cubes.
- Garnish soup with grilled cheese croutons and basil chiffonade.
