Caprese Tortelloni Skewers


  • 6 pieces Roseli® Premium Organic Three Cheese and Garden Vegetable Tortelloni
  • 6 pieces Rykoff Sexton® Slow Roasted Tomatoes, including 1-ounce marinade
  • 2 oz. Rykoff Sexton Meyer Lemon Juice
  • 2 ea. Bamboo Skewers, 7-inch length
  • 1 sprig Cross Valley Farms® Fresh Basil
  • 1 oz. Cross Valley Farms Wild Baby Arugula
  • 1 piece Roseli Fresh Mozzarella 4 oz. Ovolini Ball
  • to taste Monarch® Kosher Salt
  • to taste Monarch Cracked Black Pepper


  1. Make marinade: in a bowl combine the flavored oil from the drained tomatoes, lemon juice, salt and pepper.
  2. Cook pasta according to package directions; shock in a bowl of ice water and drain.
  3. Skewer the pasta, basil and tomatoes.
  4. Dress arugula and mozzarella with the marinade and mound on serving plate, top with skewers and drizzle with additional marinade, if desired.
