Caprese Tortelloni Skewers
- 6 pieces Roseli® Premium Organic Three Cheese and Garden Vegetable Tortelloni
- 6 pieces Rykoff Sexton® Slow Roasted Tomatoes, including 1-ounce marinade
- 2 oz. Rykoff Sexton Meyer Lemon Juice
- 2 ea. Bamboo Skewers, 7-inch length
- 1 sprig Cross Valley Farms® Fresh Basil
- 1 oz. Cross Valley Farms Wild Baby Arugula
- 1 piece Roseli Fresh Mozzarella 4 oz. Ovolini Ball
- to taste Monarch® Kosher Salt
- to taste Monarch Cracked Black Pepper
- Make marinade: in a bowl combine the flavored oil from the drained tomatoes, lemon juice, salt and pepper.
- Cook pasta according to package directions; shock in a bowl of ice water and drain.
- Skewer the pasta, basil and tomatoes.
- Dress arugula and mozzarella with the marinade and mound on serving plate, top with skewers and drizzle with additional marinade, if desired.
