Beef Heart Tartare


  • 1 pound beef heart, chopped
  • ½ red onion, thinly sliced
  • 4 tablespoons parsley, chopped
  • 2 tablespoons red wine vinegar
  • 6 tablespoons extra virgin olive oil, plus extra for drizzling
  • 3 tablespoons fried capers
  • Salt and pepper to taste
  • ¼ pound Parmesan cheese, shaved
  • 9 slices Italian bread, grilled


Combine all the ingredients, except cheese, and season with salt and pepper. Top each piece of grilled bread with beef heart mixture. Top with shaved cheese and drizzle with olive oil to taste.  Makes 3 servings.
