Agave Roasted Plums
- 25 ounce bottle Rykoff Sexton® Organic Light Golden Agave Syrup
- 25 Red Plums, ripened
- 2 ounces Fresh Thyme
- 1.5 quarts Chef’s Line® Vanilla Bean Ice Cream, portioned into #20 sized scoops
- 1 can Rykoff Sexton non-GMO Canola Oil-Based Cooking Spray
Preheat oven to 400°F. Line a sheet pan with parchment paper and spray lightly with pan spray.
Slice plums in half, remove pit. Lay on parchment paper, cut sides up.
Drizzle fruit with agave syrup, flip over and drizzle again. Spread thyme sprigs evenly across pan.
Roast fruit 15 minutes or until the flat surfaces are starting to caramelize. Gently flip fruit over and roast until just tender.
Cool slightly and serve with a scoop of ice cream.
